  • 4 eggs

Procedure: Add water in a pot and fill it halfway through. Add a teaspoon of salt to it and let it come to a boil. Place a large frying pan over medium heat and add 3 spoons of olive oil to it, sauté the garlic for 2 minutes and then add the cauliflower to it and let it cook till it is nicely browned. Ingredients:

  • 1/4 cup gluten-free tamari
  • 2 tbsp. gluten-free chili garlic sauce
  • 1 lb. tofu (extra firm, drained and patted dry)
  • 5 tbsp. cornstarch
  • 3 tbsp. extra virgin olive oil
  • 1 lb. green beans
  • 1/4 cup water

Procedure: Place the tamari and chili garlic sauce in a small bowl and combine it with a fork and set aside. Place the tofu in a mixing bowl and toss the cornstarch to coat it. Heat a tablespoon of oil in a skillet and add half of the coated tofu and arrange in an even layer. Cook it without stirring for 2 minutes and the flip and cook the other side and then transfer it to a plate. Heat another tbsp. of oil and cook the remaining batch of tofu in the same way and transfer to a plate and set aside. Heat 1 tbsp. of oil, stir in the beans and cook for 1 minute. Add the water and cook for another 3 minutes till they turn crisp. Add the tamari and chili sauce mixture to the skillet, let it boil for 1 minute and reduce the sauce slightly. Add the tofu back to the skillet and cook for another 1 minute and serve hot.

Ingredients:

  • 2 small rainbow trout de-boned and washed
  • 2 tbsp. butter
  • 4 lemon slices
  • 2 sprigs fresh rosemary
  • 5 tsp. sea salt
  • 3/4 tsp. ground black pepper
  • 2 tbsp. olive oil
  • Sliced vegetables (asparagus, zucchini, bell peppers)

Procedure: Preheat the oven to 400 degrees F. Dry the fish using a paper towel and place it at the center of a large sheet of parchment paper. Stuff the inner cavities of the fish with half of the butter, 2 to 3 lemon slices and a sprig of rosemary. Do the same with the other fish and sprinkle some salt and black pepper from top. Place the sliced vegetables on either side of the fish and drizzle theme with olive oil and season with remaining salt and pepper. Roll the ends of the parchment paper and seal it. Transfer to a baking tray and bake in the oven for 20 minutes. Serve while hot.

Maple and Pecan Crusted Salmon

Ingredients:

  • 2 tbsp. unsalted butter / extra virgin olive oil
  • 1/3 cup pure maple syrup
  • 1 tsp. Worcestershire sauce
  • 1/2 tsp. ground mustard
  • 1/2 tsp. sea salt
  • Black pepper
  • 1/2 cup pecans
  • 5 lbs. salmon fillets
  • Fresh lemon wedges

Procedure: Heat a saucepan over medium heat and melt some butter or add oil to it. Add the maple syrup, Worcestershire sauce, ground mustard, salt and pepper to it. Cook for 4 minutes stirring constantly, remove the maple marinade from heat and set aside. Set a clean skillet on medium heat and roast the pecans until they are golden. Remove from heat and let it cool and then chop finely. Now, put the salmon fillets in a Ziploc bag and pour the maple marinade onto the salmon filets. Seal the bag and shake a little to coat the fillets evenly. Let the fillets marinate for 30 minutes to 4 hours storing it in the fridge. Preheat the oven to 325 degrees F and line some foil on a baking sheet. Spray some non-stick cooking spray on it and put the marinated fillets on the dish and sprinkle the chopped pecans on top. Then season with salt and pepper and bake the fillets for 20 minutes. Serve immediately with some lemon wedges.

  • 1/4 cup ground millet

  • 2 tsp. lemon juice

Procedure: Combine the ground millet, paprika, salt and pepper in a mixing bowl and set aside. Rinse the fish fillets and pat dry with a paper towel. Place the fillets in a large bowl with the ground millet mixture. Coat the fillets evenly on both sides. Heat 2 tbsp. olive oil in a skillet and place the fillets in the heated oil and cook for 5 minutes, turn them and cook the other side for another 4 to 5 minutes. Transfer the fillets to a serving plate, drizzle some lemon juice and serve immediately.

  • 2 tbsp. extra virgin olive oil
  • 3 lbs. chicken thighs
  • 1 tsp. smoked paprika
  • 1/2 tsp. sea salt
  • 1/4 tsp. ground black pepper
  • 1 red onion sliced
  • 4 bell peppers sliced
  • 3 cloves garlic sliced
  • 4 oz. Spanish chorizo sliced
  • 1 cup chicken broth
  • 1/4 cup sherry vinegar
  • 2 tsp. herbs de Provence
  • 1 bay leaf
  • 1/4 cup chopped parsley leaves

Procedure: Preheat the oven to 350 degrees F. Place some oil in a pan and set over medium heat. Season the chicken with salt, pepper and paprika and cook in batches for 3 to 4 minutes on each side, transfer the chicken to a plate and set aside. Now, sauté the onions and bell peppers in the same pan, add the garlic and chorizo and continue to cook for 1 minute. Add the chicken broth, herb de Provence, bay leaf, and sherry vinegar and bring the mixture to boil. Ass the cooked chicken back to the pan and cook for 1 minute. Now, transfer the chicken mixture to the center rack of the pre-heated oven and let it bake for 45 minutes. Garnish with freshly chopped parsley.

  • 1/2 cup chicken broth
  • 1 cup unsweetened coconut milk
  • 1 tbsp. fresh thyme chopped
  • 1 tbsp. fresh tarragon chopped
  • 2 tbsp. cornstarch

Procedure: Set the skillet over medium heat and add some olive oil to it. Season the chicken pieces with salt and pepper and cook on both sides for 5 minutes and then keep them on a plate. Now, sauté the onions in the skillet for 5 minutes, add the garlic and mushrooms and cook for 5 minutes, season with a pinch of salt and pepper. Turn up the heat and add the chicken broth, cook for 1 minute, stir in the coconut milk and cook for another 2 minutes. Add 1 tbsp. each of chopped tarragon and thyme, season with some more salt and pepper. Combine the cornstarch with some water in a small bowl and add it to the chicken and cook for another 1 minute and remove from flame. Serve hot.
